Easy Breezy Low-Sugar Vanilla Ice Cream Sandwiches

In general, preservative-free, low-sugar ice cream gets really hard if not consumed within a day. This makes ice cream sandwiches the ideal way to serve perfectly portioned low-sugar ice cream packages.

Low-Sugar Ice Cream Sandwiches
*Recipe by Less Sugar Naturally*
Makes 12 servings
1/2 cup of whole wheat pastry flour
1/2 cup of all-purpose flour
1/2 cup of cocoa
1/2 tsp of baking soda
1/4 tsp of baking powder
pinch of salt
150 grams of pitted Medjool dates
1/4 cup of softened butter or coconut oil.
1 batch of homemade low-sugar vanilla bean ice cream
Preheat oven to 375 degrees.
Combine dry ingredients in a bowl and whisk well to combine.
Add butter and egg. Pulse until well combined.
silicone molds. Leave these ones in.
Bake at 375 degrees for 8 minutes.
Once completely cool, put the cookies and the silicone molds in your freezer.
Low-Sugar Vanilla Bean Ice Cream with an ice cream maker. I'm using the Ice Cream maker Kitchenaid stand mixer attachment.
Add the toppers and freeze.
Transfer whatever is left into a large Ziploc and freeze for the next day….and the next….
