Easy Breezy Low-Sugar Vanilla Ice Cream Sandwiches



On a hot day, when faced with sugary temptations, wouldn't it be nice to know that one of these is waiting for you at home in the freezer?

In fact, what says summer more than ice cream sandwiches?  Not only are these a cool and refreshing treat but they're made with wholesome ingredients and have 2 grams of fiber.

In general, preservative-free, low-sugar ice cream gets really hard if not consumed within a day.  This makes ice cream sandwiches the ideal way to serve perfectly portioned low-sugar ice cream packages.

I think they taste even better than store-bought. Sugar-Loving Teen agrees, and gave them a 9/10. He said the only reason he didn’t give me a 10 is because I won’t let him get a pet.


The cocoa marries perfectly with the dates to form a bittersweet chocolatey cookie. The contrast with the sweet icy vanilla is simply perfect. I think this is my favourite recipe so far and the kids agree.



Homemade ice cream sandwiches are usually so messy to make, but with silicone molds, this one is easy and mess-free! You can buy them in many retail stores, amazon.com, and amazon.ca.




Low-Sugar Ice Cream Sandwiches

*Recipe by Less Sugar Naturally*
Makes 12 servings


Ingredients:

1/2 cup of whole wheat pastry flour
1/2 cup of all-purpose flour
1/2 cup of cocoa
1/2 tsp of baking soda
1/4 tsp of baking powder
pinch of salt
150 grams of pitted Medjool dates
1/4 cup of softened butter or coconut oil.
1 egg
1 batch of homemade low-sugar vanilla bean ice cream

Preheat oven to 375 degrees.

Combine dry ingredients in a bowl and whisk well to combine.

Add the dates and dry ingredients in a food processor. Pulse until finely combined.

Add butter and egg. Pulse until well combined.

Empty the contents onto the counter or a pan. Form into a circle, and split into four even parts.

Make 6 even balls from each part.

Press 12 balls into silicone muffin molds. Invert and push out on to cookie sheet.

Press 12 more balls into the silicone molds. Leave these ones in.

Bake at 375 degrees for 8 minutes.

Once completely cool, put the cookies and the silicone molds in your freezer.

Make a batch of Low-Sugar Vanilla Bean Ice Cream with an ice cream maker.  I'm using the Ice Cream maker Kitchenaid stand mixer attachment.

As soon as your ice cream is done…take silicone molds out of the freezer and fill.

Add the toppers and freeze.

In an hour, pop them out of the molds and serve.

Transfer whatever is left into a large Ziploc and freeze for the next day….and the next….
