Strawberry Meringue Boats



A low sugar meringue perfect for entertaining!


I love all four seasons....Summer, Winter, Fall and Strawberry.  That first bite of a red ripe strawberry wakes us up out of winter’s slumber, and signals that a bounty of fresh fruits and veggies is on the way!  Spring makes me feel like a kid in a produce store!

Fellow Canadian, The Kitchen Boudoir’s blog also awakens my taste buds.  I would have never thought to mix yogurt into whipped cream to make what's called a "Fool".  The result is a rich, sweet voluptuous filling.  Fresh strawberry sauce gets folded in, and bliss follow….

Low-Sugar Strawberry Cream Meringue Boats


*Recipe by Less Sugar Naturally (Inspired by Rhubarb & Orange Fool in Meringue Nests)*
 Serves 12

Ingredients:
  • 4 egg whites, room temperature
  • 3 Tbsp of white granulated sugar
  • 1 tsp of vanilla
  • 1/4 tsp of salt
  • 1/4 tsp of cream of tartar (optional)
  • 1 cup of whipping cream
  • 1 Tbsp of white granulated sugar
  • 1 tsp of vanilla
  • 1/4 cup of greek yogurt
  • Strawberry Sauce (Click here for recipe)

Instructions:

1. Preheat oven to 300 degrees

2. Separate egg whites and yolks

3. Add whites, vanilla, optional cream of tartar, and salt to a bowl or stand mixer. Beat until foamy.

4. Add sugar half a tablespoon at a time.

5. Beat on high until stiff peaks hold. Soft peaks curl over when you lift the beater up. Stiff peaks stand straight and tall.

6. Line baking sheets with parchment paper.

7. With a Ziploc or piping bag, pipe 12 circles (about 10 cm in diameter), and 12 little toppers.

8. Bake for 35 minutes.

9. Allow meringues to sit in the oven for an hour.

 Making the "Fool":

1. Add whipping cream, sugar and vanilla to bowl and beat on high until soft peaks form.

2. Whisk in the yogurt

3. Loosely fold in half of the strawberry sauce.

4.  Assemble the meringue boats:
  • Meringue
  • Cream Filling,
  • Fresh garnish berries,
  • More Cream Filling
  • Drizzle strawberry sauce

5.  Finish off with meringue topper.
