Very Berry Pie



A perfect Pie for you, me and them


Entertaining when sugar-free can have its challenges. I found the best solution is to serve things like pie or apple crisp that everyone can customize with their own choice of toppings.  I'll offer both regular and low-sugar whip cream and/or ice cream to keep everyone happy! 

The only problem....the pie itself is typically filled with tons of sugar.

Low sugar berry pieI was at a relative’s house yesterday and secretly stole the cherry pie filling label. What’s more disturbing than me picking things out of other people’s garbage, is the fact that two cans of pie filling add a whopping 288 grams of sugar to innocent pies!  That’s 36 grams of sugar per 1/8th serving!   The ingredients aren't exactly mouth watering either.

So...I started with a great crust by Chef Micheal Smith, reduced the sugar and went from there.


Low-Sugar Very Berry Pie


Recipe by Less Sugar Naturally - Crust adapted from Chef Micheal Smith.


1.  Preheat your oven to 350 degrees.

2.  Combine your crust and topping into two separate bowls. Many of the ingredients are similar.

Crust:
  • 1 cup of rolled oats
  • 1 cup of whole wheat flour
  • 2 Tbsp of sucanat
  • 1/4 cup of softened butter
  • 1/2 tsp of salt
  • 1/4 cup of water
Topping:
  • 1/2 cup of rolled oats
  • 1/2 cup of whole wheat flour
  • 3 Tbsp of sucanat
  • 1/4 cup of softened butter
  • 1/2 tsp of vanilla

3.  Use a whisk to make sure all your dry ingredients are combined well before adding the butter and water. Then use a mixer or even your hands to get the rest of the crust together.

4.  Fill a 9 inch pie plate with the bottom crust mixture. Pat it down using your hands evenly distributing the crust.

5.  In another bowl toss the following ingredients:

  • 2 quarts of any combination of fresh berries. That’s about 7-8 cups before you cut them up.
  • 2 tsp of lemon zest
  • Half a lemon squeezed (1-2 Tbsp)
  • 1/4 cup of flour

    6.  Using your hands mix all the ingredients and then pile it on top of the berries and pat your crust down.

    7.  Add a few little bits of grated butter on top.

    8.  Bake for one hour in a 350 degree oven.

    9.  Serve with whip cream or ice cream.
